Raw mango pickle (North Indian)

Ingredients:
  • 3 kg raw mangoes (big size)Get it cut into big pieces.Clean it , wipe it with a dry , clean thin cloth.
  • Saunf - 1/4 kg (250gm) 
  • Kalonji - 100gms 
  • Salt - 1/2 kg 
  • Mustard seeds - 150gms 
  • Mustard oil - 1 ltr 
  • Fenugreek seeds - 200 gms
  • Turmeric powder - 6 tsp
  • Hing - 3 tsp

Method:
  • Take cleaned raw mangoes, add salt mix it well.
  • Take mustard seeds grind coarsely.
  • Take soanf and kalonji grind coarsely(just blend for 1sec)
  • Now take 3/4 of the oil and add mustard seeds powder, soanf, kalonji powder, whole methi, (  fenugreek) ,haldi ,( turmeric),hing and mix it.
  • Mix the above with raw mangoes.
  • Store it clean dry glass bottles  sprinkle little salt and remaining oil on the top.
Tips: 

The pickle jar should be covered with a  layer of oil at all times.
The right amount of salt should be put as salt acts as the preservative for the pickle.
Most important the mangoes have to be wipes clean and dried thoroughly so that theres absolutely no moisture.
